The FASTEST ever Cinnamon Rolls

Fastest Ever Cinnamon Rolls
from Sweet Cakes
For the Dough:
  • ¾ cup cottage cheese (4% milk fat)
  • 1/3 cup buttermilk
  • 1/4 cup white sugar
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
Preheat the oven to 400 degrees F. Grease the sides and bottom of a 9" or 10" springform pan (I used a casserole dish) with cooking spray.
In a food processor, combine the cottage cheese, buttermilk, sugar, melted butter and vanilla. Process until smooth, about 10 seconds. Add the flour, salt, baking powder & baking soda and pulse in short bursts just until the dough clumps together, but don't over-process. The dough will be soft and moist.
Scrape the dough out onto a lightly floured counter and knead it with floured hands four or five times until smooth. With a rolling pin, roll the dough into a 12 x 15-inch rectangle.
For the Filling:
  • 1 1/2 tablespoons unsalted butter, melted
  • 2/3 cup packed brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ground cloves
  • 1 cup chopped pecans (optional)
Brush the dough with the melted butter, leaving a half inch border around the edges. In a medium bowl, combine the brown sugar, cinnamon, allspice and cloves. Sprinkle the mixture over the buttered area of the dough and pat gently into the surface. Sprinkle the nuts over the sugar mixture (if using).
Starting with the long side, roll up the dough, jelly roll style. Pinch the seam to seal and leave the ends open.
With a serrated knife, cut the roll into twelve equal pieces. Set the rolls in the prepared pan, cut side up. The rolls should fill the pan and touch slightly, but don't worry if there are small gaps.
Bake at 400 for 20 to 28 minutes until golden brown and firm to the touch. Set the pan on a wire rack for five minutes. Run a spatula around the inside edge of the pan and remove the springform ring. Transfer the rolls to a serving plate.
For the Glaze:
  • 2/3 cup powdered sugar
  • 2 to 3 tablespoons of cold milk* (see note)
  • 1 teaspoon vanilla extract
In a small bowl, mix the powdered sugar and 2 Tbsp. milk and vanilla to make a smooth glaze. It should have a thick but pourable consistency, so add up to 1 more tablespoon of milk if necessary.
Drizzle the glaze over the rolls. Let stand 15 minutes and serve.
NOTE: This glaze was too thin for my liking and I added quite a bit more sugar to thicken it up. Start off with a couple teaspoons (not tablespoons) then add more as necessary. It's okay if it's a little on the thicker side because once it hits the hot rolls, it will melt and glaze them nicely.

Nutty Putty Recipe

This brings back memories!!!  I remember making this when I was little.  My sister & I had a  babysitter who would make this with us. Fun & EASY! :)



Ingredients



1 cup peanut butter 1 cup corn syrup
1 1/4 cups milk powder
1 1/4 cups confectioners' sugar


Directions


In a large bowl, mix the peanut butter and corn syrup until well blended. Stir in the milk powder and confectioners' sugar until smooth. Roll tablespoons of dough into balls and set on waxed paper. Store in the refrigerator.

~Yummy Coca Cola Cake~

Coca Cola Cake Recipe ~ Cracker Barrel


~INGREDIENTS~


1 Stick Butter
1 cup Coca Cola
3/4 cup Miniature Marshmallows
1 Square Semi Sweet Baking Chocolate
1/2 cup Shortening
1/2 cup Vegetable Oil
3/4 cup Cocoa
2 Eggs
1/2 teaspoon Salt
2 teaspoons Vanilla
3/4 cup Buttermilk
2 cups Sugar
2 1/3 cups Flour
1 teaspoon Baking Soda
1 1/2 teaspoon Baking Powder



***FROSTING***


1 Stick Butter
1/2 cup Cocoa
1/4 cup Coca Cola (plus 2-3 Tbsp. if needed)
3 cups Powder Sugar
1 teaspoon Vanilla
1/4 cup Hershey's Chocolate Syrup

DIRECTIONS:

Place in a sauce pan butter, coke, semi sweet baking square and bring to a boil remove from heat and add marshmallows and stir until all is blended and the marshmallows are disappear. Set aside to cool enough to tepid or room temperature.

In mixing bowl blend the shortening, oil, vanilla and sugar until fluffy. Add eggs and buttermilk and beat until smooth. Mix flour with baking soda, cocoa, baking powder and salt, add half of flour mixture to shortening, egg mixture, and beat. Scrape bowl time to time to clean the sides off so ingredients are blended in batter. Add cooled coca cola mixture and beat. Add remainder of flour and beat until completely smooth about 3 - 4 minutes. Batter will be thick.

Place batter into a 13" x 9" x " 2 oiled and floured baking pan. Set pan on top shelf in a preheated 350degrees oven for 35 - 40 minutes. Check for completed baking time with a toothpick. If the toothpick comes out clean by sticking in the middle of the cake it is time to come out of the oven and cool.

For Frosting: Cream butter, add cocoa, vanilla, Hershey's Syrup, and coca cola, beat until smooth. Add powder sugar a little at a time and beat constantly. Scrape the sides of bowl time to time to get all ingredients into the frosting. If the frosting seams a little dry add a little more coca cola and beat well.

Frost warm cake. Serve with natural vanilla bean ice cream and enjoy.

CaRaMeL PoPCoRn BaLLs

Caramel Popcorn Balls
Ingredients:



8 cups of popped corn (1/2 cup unpopped corn)


*I just used 1 package of butterless microwave popcorn and it was exactly 8 cups.


waxed paper squares


cooking spray

Sauce:


3/4 cup granulated sugar


3/4 cup brown sugar


1/2 cup light corn syrup


1/2 cup water


1 teaspoon white vinegar


1/4 teaspoon salt


3/4 cup (1 1/2 sticks) butter

Directions:


1. Pop corn and place in a large bowl

2. In a saucepan, combine sugars, corn syrup, water, vinegar, and salt. Attach a candy thermometer to the side of the pan; heat to boiling over medium-high heat, stirring all of the time. Cook until mixture reaches 260F.

3. Reduce heat to low; stir in butter until melted. Pour syrup over corn in a thin stream. Stir until well coated. Cool slightly.


4. While the caramel corn is cooling, cut squares of waxed paper and spray them with cooking spray. (Note: I've never tried this but I think it's a good idea. Even though the caramel corn has so much butter in it, it still sticks to the waxed paper - TRUST ME on this one! haha)


5. Butter your hands. Scoop a small handful of popcorn mixture and form into a 3" ball. Place on a square of waxed paper, twist and turn paper to close. *It is key to seal up the popcorn balls at this point. Do NOT let them cool before you do this or they will harden and turn into rocks.


Yield: 16 popcorn balls

WW Slow Cooker Cheesburger Soup

Weight Watchers Slow-Cooker Cheeseburger Soup

It is 5 points per serving. The serving size is 3/4 cup plus 3 T corn chips for 5 points so if you want more, double the recipe AND the points.

15 min prep




Ingredients

cooking spray
1 medium garlic clove, minced
1 medium onion, chopped
1 medium celery rib, chopped
1 lb uncooked lean ground beef (with 7% fat)
2 tablespoons all-purpose flour
3 cups canned chicken broth, divided
1 cup low-fat evaporated milk
8 ounces kraft Velveeta reduced fat cheese product, cubed
1/2 teaspoon paprika
1/4 teaspoon table salt
1/8 teaspoon black pepper
24 baked corn tortilla chips, crumbled


Directions


1~Coat a large nonstick skillet with cooking spray and heat over medium-high heat for about 30 seconds.


2~Add garlic, onion and celery to skillet; cook, stirring frequently, until vegetables are tender, about 5 to 10 minutes.


3~Coat a 3-quart or larger slow cooker with cooking spray; spoon in vegetables.


4~Place same skillet over medium-high heat and brown beef, breaking up meat with a wooden spoon as it cooks, about 5 to 6 minutes; pour off any liquid and add meat to slow cooker.


5~In a small cup, combine flour and 1/2 cup of broth; stir until lump-free.


6~Pour flour mixture into same skillet; add remaining 2 1/2 cups of broth.


7~Bring to a simmer, scraping up any browned bits in bottom of skillet with a wooden spoon, and then pour into slow cooker; stir in evaporated milk, cheese, paprika, salt and pepper.


8~Cover slow cooker and cook on low setting for 2 hours.


9~Serve soup topped with crumbled chips.


10~Yields about 3/4 cup of soup and 3 tablespoons of chips per serving.


11~Note: If the soup cooks too long, the cheese could separate.


12~If that happens, combine 1 tablespoon of all-purpose flour and 1/4 cup of soup in a cup; stir to a paste.


13~Stir flour mixture back into soup in slow cooker; cover and cook on low setting for 10 to 15 minutes (does not affect POINTS values).

Taco Quesadilla Rolls

Ingredients:

Prepared Taco Meat

Tortillas


Cheese


Salsa


Sour Cream


Lettuce


Directions: Warm tortilla on a griddle or a large frying pan. Add cheese and taco meat to the top of the tortilla. Roll the tortilla up and let sit on the griddle/frying pan. Roll until all sides of the tortilla are warm and getting crunchy. Serve with salsa, sour cream and shredded lettuce.

Italian Bread Bowls


Ingredients:


1 1/2 tablespoons yeast


2 1/2 cups warm water


2 teaspoons salt


2 tablespoons vegetable oil


7 cups all-purpose flour


1 tablespoon cornmeal


1 egg white


1 tablespoon water


Directions: In a large bowl (or bowl of an electric mixer), dissolve yeast in warm water. Let stand until creamy, about 10 minutes.

Add salt, oil and 4 cups flour to the yeast mixture; beat well. Stir in the remaining flour, 1/2 cup at a time, beating well with an electric mixer at medium speed after each addition until a soft but not sticky dough is formed (you may not need to use all 7 cups).


When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes (or let knead in an electric mixer). Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes. Punch dough down, and divide into 6-8 equal portions. Shape each portion into a round ball. Place loaves on lightly greased baking sheets sprinkled with cornmeal (or use silpat liners or parchment paper). Cover and let rise in a warm place, free from drafts, until doubled in bulk, about 35 minutes.


Preheat oven to 400 degrees. In a small bowl, beat together egg white and 1 tablespoon water; lightly brush the loaves with half of this egg wash. Bake in preheated oven for 15 minutes. Brush with remaining egg mixture, and bake 10 to 15 more minutes or until golden. Cool on wire racks.





Creamy Turkey Soup







Ingredients:

2 T Canola Oil


1/2 onion, finely chopped


2 carrots, peeled and sliced


2 celery stalks, chopped


2 cloves garlic, finely chopped


3 T butter


3 T flour


3 cups chicken broth


1 cup milk


2 cups cooked turkey, chopped or shredded


2 baked potatoes, shredded


1 t salt


1 t fresh ground black pepper


1 t oregano


1/4 t ground thyme


2 oz. cream cheese


Parmesan cheese


Directions: Saute onions, carrots, celery and garlic in canola oil for approx. 10 minutes or until the onions begin to brown. Add butter, when butter is melted, add flour to make a roux. Stir in chicken broth, milk, turkey, potatoes, and spices. Bring to boil. Reduce heat, cover and cook for approx. 20 minutes until vegetables are soft. Add cream cheese and cook until cheese has melted. Serve with a generous sprinkling of Parmesan cheese.

Peanut Butter Balls





2 1/2 sticks margarine (NOT butter)


2 cups creamy peanut butter


5 cups powdered sugar



In a large bowl mix all ingredients together until the consistency of play-dough. Using a tablespoon measure, roll into balls & place on a waxed/parchment paper lined baking sheet. Refrigerate.





2 big Hershey bars (or 8 reg size)


1 12oz pkg semi-sweet chocolate chips


1/2 bar of wax (melt in a rinsed out soup can inside a pan with 1-2 in water)

(The wax can be found by the canning supplies in the grocery store. Each box contains four bars. You could also melt it in the microwave in a container that you don't mind throwing out.)






Melt chocolate together. Melt wax separately. Gradually add wax to melted chocolate, stirring constantly.


Drop balls into melted chocolate mixture, pick up with a fork and gently slide back onto lined baking sheet. Keep chilled in fridge.

Pecan Crusted French Toast

Get your self some GOOD maple syrup and DIVE IN!!




2 beaten eggs



1/2 cup milk



1/4 tsp vanilla



1/8 tsp ground cinnamon



5 1-inch thick slices of french bread or texas toast (MUST USE THICK SLICES)



2 cups finely chopped pecans



syrup


In a med size bowl beat together eggs, milk, vanilla & cinnamon. Dip bread into egg mixture, coating both sides (let soak atleast 10 seconds), then dip into chopped pecans, pressing pecans into bread if necessary. Cook on a skillet over med heat about 2-3 min per side. To keep warm, place on single layer on a baking sheet in a 170 degree oven until done cooking all of the french toast (this also helps the egg to cook through, preventing soggy bread!)

Pumpkin Bars

PUMPKIN BARS

2 cups flour



2 tsp baking powder


2 tsp cinnamon


1 tsp baking soda


4 eggs


1 15oz can pumpkin


1 ½ cups sugar


1 cup canola oil






Combine dry ingredients. Beat eggs. Add pumpkin, sugar and oil. Mix to combine. Add dry ingredients. Bake on large, greased baking sheet, 350 degrees 25-30 min. Cool completely and frost. Cut to make 48






Cream Cheese Frosting


6 oz cream cheese


½ cup butter


2 tsp vanilla


4 cups powdered sugar


thin with milk if needed



Want something other than pumpkin or apple pie on Thanksgiving?? Here are two wonderful, different suggestions. I think the pumpkin bars speak for themselves. They are always a favorite in the Fall. The pics just show tips for cutting even, same sized bars. Cut in half, then in half again. Then, cut into thirds or half again. Rotate pan & repeat. I hope that makes sense...


The pear tart is the same recipe as the plum tart I made over the summer...I just swapped out the plums for pears. Fab.u.lous. This is one of my all-time favorite desserts. You could even add dried, sweetened cranberries for a festive touch! It really is so easy to put together, but looks like something that took quite a bit of effort. Great way to fool everyone!!


A little tip on baking with pears...buy pears that are a just a little soft to the touch. DO NOT PRESS TOO HARD or you will just bruise them. If pears are too firm, they will not soften when baking.

*pRegNaNt*

I had a dream last night that I was pregnant...I was excited...it was strange...so I guess I was 9 months along & my mother is taking me to the hospital...we get there & realize...I have no clue who baby daddy is (THE WORST NIGHTMARE POSSIBLE!!) I tell my mom.....like duh! He would be there if we knew who he was...she falls down the stairs & faints. I'm hysterical because that would be hideous if that really happened. It's taking forever for the doctor's to get me into the labor room. I feel my tummy and hmm.. it doesnt feel like a big huge bump (maybe I really felt it in my sleep who knows lol) And I woke up sad because I'm not pregnant :( LOL and happy because I WILL know who my baby daddy is when I have one!!!

Updating..Oopsie :)

SO umm..it's been a month!! Sorry! I'm being a lazy butt!!! FYI..I DID meet BOYZ II MEN again!! They were fabulous...one day I'll post pics!!

Okay so WW is about in the dumpster...I was SO dang darn with it the first few months..I don't know what to do with myself...I need a partner in crime!! Bicycle crime!! Yes!! That sounds fun & not too dangerous lol.

Okay...Mom and I took a trip at the end of March to see her friend who had moved to Arizona. Boy oh boy were we excited!! It had started snowing again here in Utah & we were happy to leave!! We had so much fun!! It was GORGEOUS weather & just a blast!! We ate at a yummy Mexican restaurant called Makayo's (I believe that is correct) and their home is just beautiful. Arizona is beautiful. It was perfect weather the entire time!! 70s-80s. Lots of chocolate out there!!! Those who know me know what I am referring to :)

We also went to a PRO baseball game (Spring training) it was AWESOME!! Colorado Rockies against umm California..something somethin :) hehe Let's see...shopping OF COURSE was on the agenda...and guess what??? I didn't spend much money!!! You heard it correctly...I, Stephanie Ann Carter did not shop too much!!! :) *roaring crowd applauding*

We drove by this LARGE home being built (but stopped halfway through) and I the fantastic smarty pants I am...shmoofed us in!! Yep!! I shmoofed!! If you haven't heard of the term "shmoofed" (aka snuck, broken into lol) The window was cracked and my arm happened to crack it open further and maybe (definitely maybe) turn the knob of the locked door... Okay!! I'm not so innocent!! And it felt goooooood!! Reeeeeeeeeeeeal good!! LOL!! We got to walk the kinda sorta mansion...and boy did I want to take some furniture home to papa... (I like it when they call me big paaaapaa...im going off subject here..pardon the dust!) The place was huge!! It didn't have carpet yet, but very very nice!!! HUUUUUUGE "bath tub" nothing like you would see in a normal house...it was like a kingdom or something. lol. *I hear my Mom laughing at this comment* Anyway...it was a good time!! And no hand cuffing this time (darn it)

I think it's about time to end this blog for tonight...12:12am and I work tomorrow!! Am I crazy???? (do NOT answer that) :) Have a fabulous weekend if I don't talk before then...and as always...keep it pinkk

This & That

Sorry for the lack of writing...I really am SO new to this that I'm unsure what to write about!! Anyway...I'm still doing WW (sort of lol) I haven't counted points at ALL this week!! I'm like oh no!! And today was weigh in...for sure I must have gained....but I DID go dancing with my friend last night for my "workout" LOL and I lost .6!!!! WOO WOO! I can't pat myself on the back too much because I've gained about 3 since I started in January...but hey! It's better than nothing, right? RIGHT!

On an even more exciting note.... Boyz II Men Pictures, Images and Photos
I AM GOING TO SEE BOYZ II MEN tonight in Wendover!!! YESSS!! I am SO thrilled!!! I was able to see them...MEET them in August because I have a wonderful AUNT & UNCLE who have great hook ups!!! Sharon & Howie!! Candice, my Mom, and I (and a few of my friends) were able to see them in Orem, at the Scera in August 2008. It was the BESSSSST concert I've ever been to (yes meeting them was a hit!! and probably made it that much better) So I am STOKED about tonight!!! I'm sure they'll want to meet me again... I mean c'mon! Who wouldn't??? We shall see!! LOL

So with my busy life of meeting FINE men & losing teensie by teensie....I'm living the life!!! (Okay so maybe it's not thaaaaaaaat great...but it's MY life & I LOVE IT!!)

Perfection isn't always easy, nor necessary...but for my sake...live the perfectly pinkk life & have a grrrrrrrrrrreat weekend!!!

SkiNnY DiPpiN



First off, I wanted to start this blog with a fun title! And...skinny dippin says it all! So don't be offended *I'm not LOL *cheeeeeeeeese* And I found this dog pic online & just HAD to put it up!!! hehe


I started doing Weight Watchers (WW) with my Mom, Sister & Best friend. We began at the beginning of this year, 2009. I have never been SO motivated in my life to lose weight. I think it's all because of the scale. I've never been a skinny girl, but I've always dreamt! *Hey! A girl can dream!*


So we've gone to all the meetings each week & counted our points, etc..... I've lost every single time I've weighed in. Even if it's only a pound, or .2 lbs I've kept at it. I want SO badly to be healthy & "transform" my body, if you will.


Today was a BIG *boom* day for me....I lost 3 lbs!!! Which is our 4th week.... and brings me to a total of 8.6 lbs!!! I am SO proud of myself & for going so far with WW. I keep myself motivated....I really don't know how...but I do...I am afraid of getting "diabetes" or another disease that is very unhealthy. So I try to stay focused. And if you know ME.....you know I'm a sugar nut!! Not a health nut!! :) It's so great, because with WW you CAN eat...I don't really feel like I'm "stuck" to eating boring... "diet" foods! I hate the word diet....because like our leader said on our first meeting... WW is not a diet, "diets" take food away from you. You can eat ANYTHING you want, as long as you portion what you eat & take the points for it.


I guess I just wanted to share my "little tiny piece of success" ....not because I want people to give me attention...I write because this is my "diary" if you will...without all the juicy stuff!!

*LaTiN LoVe*

So...tonight was a neighbor of ours daughter's wedding. They are from Colombia, and her husband (as of today) is from Brazil....so of COURSE we wanted to go. The wedding started at 6....and of course we were there early & the wedding didn't ACTUALLY start at 6 lol. I'm not mocking latin people, but I've had lots of friends from Mexico, Peru etc...and they do not do time! Period. LOL.

So the wedding finally starts & it was SO fun!! It was not an ordinary "Utah wedding" & that was one of the big reasons I was so excited to go. It was very different from what we're used to seeing here. And I'm sorry to say...but my wedding (if I ever find THE ONE) will be very unique (just like lil OLD me). They walked down the isle with a faster paced music & they didn't do the "one step next step" thing we do here...it was awesome! The person who married them was from the LDS church & he spoke Espanol and the other man translated for English speaking guests. I caught bits & pieces of what he was saying (Mom and I are taking Spanish...since Cory is on his mission...more about him in another post) But I was glad they had someone translating, because it was hard to pick up everything & Spanish is so fast!!! AHHHH!!

They signed the wedding papers & then hugged everyone who came...then we go to sit at the tables (for dinner) and do toasts for the couples with yummy grape-apple Martinelli's. The groom's father was not able to come, along with his older brother & sister, because they live in Brazil. His mother was there & I guess his father & siblings had her bring a video of them congratulating him & his wife etc...He was crying of course & it was just so sweet...

Next the couple had their first dance together...Michael Buble "Everything" & I've always wanted the song "Save The Last Dance For Me" to be played at MY wedding. And so tonight I told my Dad to please start saving $$ because I physically want Michael Buble there to sing...and then I added "and Boyz II Men too!" LOL!! That would be a perfect wedding...I wonder what my hubby would think....Why do I keep talking about MY wedding?? I'm not even dating the lucky guy yet!!!!

Okay on with the show... they had their dance & then people were able to go up and dance...and they did that for about a half an hour...it was really fun to watch. Then we had dinner.... scrumptious!! I believe it was chicken cordon bleu. Very yummy!! The bride's aunt I believe cooked....was delish! Then they did more dancing...FUN FUN FUN!! It was seriously a really fun wedding!! SO different & unique for me....I loved it!! Mom and Dad danced *along with the nieghbor's we went with* and I took pics!! Ha ha!! Then Dad danced with me and it was fun!! Then our neighbor Marcos and I danced...and he showed me how I should dance...Ive danced with Latin music before...but it has been a few years.... Here is the Stephanie short version of latin dancing: "shake those hips!! shake ya booty!! and move move move!!" It was SO MUCH FUN!! Lots of calories I burned tonight!!! WAHOOOOO!!!

After all the dancing they cut the cake....and yes they nicely put the cake into each others mouths. Very sweet. They are a gorgeous looking couple & I'm happy for them, even though I don't know them really well. All in all I had a WONDERFUL evening with my parents & the neighbors...Oh yes!! One important thing....there were LOTS of cute guys!! The bad thing about them....they were ALL with women!! Just my luck! So I say to all of my Spanish readers (lol I don't think I have ANY readers lmao!!!) CUANDO CUANDO CUANDO (when when when) will I find mi el amor!?!?! I've been waiting 28 very LONNNNNNNNG years & I'm about ready to settle down!! So.....if you know of any cute, sweet men.....HOLLAR!!!! :) *(and yes...you may hear this in every post...so deal!! lol)

My first blog!!!! LOL

Hey all!!

I am so absolutely TERRIBLE at this blog thing!! I've had this since June & haven't done a thing!! I'm SO sorry!!

I hope everyone had a fabulous & wonderful Christmas & New Year!!

I guess I will just start & tell a little about me..... he he
I am working at Red Hanger Corporate Office in SLC...I've been there 7 years this month!! What a crazy long time!!! I love my job & I'm very thankful to have one, especially right now! I'm still single *boring!* Dating is not very fun these days... I am 28 years old...I live with the family. I like to have fun with friends, listen to music, go to movies & laugh laugh laugh!!

Cory is on a mission as you may know *Mexico City South Mission* Mom & I are taking a Spanish lesson each week with a lady in our neighborhood. So much fun, yet so hard at the same time. We love her & are thankful she is taking time out to teach us!!

I don't know what else to say...I don't have kids to brag about...so yeah!! :) Here it is...Stephanie's first blog!!! WOO WOO
